Kayak vs Canoe
Typically in a kayak you sit down with legs streached out in front of you, with a double ended paddle. Typically in a canoe you kneel or sit with knees bent and use a singleblade paddle. Confusingly the governing body for kayaking (and canoeing) is the BCU (British Canoe Union) and kayak clubs accordingly call themselves Canoe Clubs.

Paddling vs Rowing
Paddling is facing forward probably in a canoe or kayak and using a paddle. Rowing is going backwards with oars, with or without a cox/helmsman.

Paddle vs Oar
Paddles are used in a canoe or kayak. Oars are used when rowing and going backwards.
